Good afternoon to the sun-soaked loungers of Matchbox Bikini Club. 

For those of you basking poolside in our exclusive La Dolce Vita bikini collection, our talented club chef Gina Zest has perfected the ultimate refreshing summer treat!

Here is her signature Limoncello Sorbet Splash recipe....

 

Ingredients: 

500ml fresh lemon juice (about 8-10 lemons)

400g caster sugar

500ml water

60ml limoncello liqueur 

Zest of 2 lemons

Fresh mint sprigs for garnish

Lemon wheels for decoration 


Instructions: 

In a saucepan, combine water and sugar over medium heat, stirring until sugar dissolves completely to create a simple syrup. 

Remove from heat and let cool to room temperature. 

Stir in fresh lemon juice, lemon zest, and limoncello until well combined. 

Pour mixture into an ice cream maker and churn according to manufacturer's instructions (usually 20-25 minutes),

Transfer to an airtight container and freeze for at least 2 hours until firm.

Serve in chilled glasses, garnished with fresh mint and a lemon wheel.
